Slice the tips off the radishes and cut in half. Add the radish halves to a pan of boiling water and simmer for 5-6 minutes until tender. Drain completely.
Step 2
Transfer the cooked radishes to a food processor and blend to a rough mash. Spoon the mash into a sieve and squeeze out as much liquid as possible.
Step 3
Transfer the radish back to the food processor. Add the butter, cheddar, parmesan, garlic, chopped chives. Salt and pepper.
Step 4
Blend well to combine until you reach your preferred mash consistency and heat through if required.
