This deliciously tender baked leek is coated in a rich and creamy feta and parmesan sauce then cooked until bubbling and golden.This is a great side dish to roasted meats – perfect for Sunday

How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Slice the leek into 3 even segments discarding the outer leaves and the tough base. Slice each segment in half lengthwise. Arrange the sliced leek halves tightly into a small oven proof dish. Dot with half the butter and transfer to the oven to bake for 10 minutes until just tender.

Step 3

Whilst the leeks are baking, melt the remaining butter in a small saucepan over a low/medium heat then add the cream cheese. Stir to combine until melted together.

Step 4

Add the cream, crumble in the feta and sprinkle in half the parmesan. Bring to a simmer and stir to combine. Cook gently until hot through, the cheese has melted and the sauce is thick and creamy.

Step 5

Pour the sauce over the part cooked leeks and sprinkle over the remaining parmesan. Return to the oven to bake for a further 12-15 minutes or until bubbling and golden on top.

  • Unsalted Butter – 2 tablespoon
  • Parmesan Cheese – 2 tablespoon, grated
  • Feta Cheese – 1 tablespoon
  • Leeks – 1 each
  • Cream Cheese Spread – 1 tablespoon
  • Heavy Cream – ⅓ cup
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
