How to Make It

Step 1

Add the avocado flesh to a food processor along with the sour cream, lemon juice, salt and pepper. Blend well to combine. Transfer to a mixing bowl.

Step 2

Finely dice the tomatoes and add to the mixing bowl along with the red onion and half the cheese. Stir well.

Step 3

Scatter with the remaining cheese to serve.
