These Keto Cheese Waffles with Egg and Prosciutto make for a protein-packed

How to Make It

Step 1

To begin, plug in a mini waffle iron and allow it to come up to temperature while you prepare the waffle batter.

Step 2

Blend the eggs and 1 cup of mozzarella cheese together with an immersion blender or mini food processor until smooth. Have the prosciutto at hand ready to go as well as the butter which has been melted in a small bowl. The prosciutto will need to be cut in half.

Step 3

Brush the waffle iron with little butter using a silicone brush.

Step 4

Sprinkle about one teaspoon of the remaining mozzarella cheese onto the waffle iron.

Step 5

Pour on enough batter to barely cover the iron. Remember when the lid closes the batter will spread.

Step 6

Top the batter with a half piece of prosciutto and another sprinkle of mozzarella cheese.

Step 7

Close the waffle iron and allow it to cook for 2 minutes.

Step 8

Remove the waffle from the iron and repeat this process six more times.
