Slice a thin sliver from the tough lettuce base and discard. Slice the lettuce in half lengthwise and brush all over with a tablespoon of olive oil.

Heat a griddle pan over a high heat. Add the lettuce halves and cook for 2-3 minutes on both sides or until tender and char lines appear. Keep warm.
Step 3
Whilst the lettuce cooks, roughly chop the bacon. Heat the remaining olive oil in a skillet over a medium heat and add the bacon, cooking through until crisp and golden. Remove from the pan with a slotted spoon and set aside.
Step 4
Remove the skillet from the heat and add the blue cheese, swirling until melted.
Step 5
Drizzle the melted cheese all over the charred lettuce and crumble over the crispy bacon. Season with black pepper to serve.
