Wash the celery and mint sprigs. Roughly chop the celery and separate the mint leaves from the stems. Measure out all the ingredients and set them aside.

Add the chopped celery and mint leaves to your blender. Pour the water and secure the lid. Blend until smooth.

Line a fine strainer with a clean cloth and place it over a bowl or jug. Pour the green mixture into the cloth. Let it strain for a couple of minutes.
Step 4
Squeeze the cloth to extract the remaining liquid from the pulp. Remove the strainer and discard the pulp. To the strained juice, add the lemon juice.
Step 5
Pour the green juice into a glass. Garnish with a lemon slice and fresh mint. Serve immediately!
