This cauliflower mash is delicious! It’s topped with creamy, stringy cheese and a dollop of fresh sour cream and fresh chives.

How to Make It

Step 1

Preheat an oven to 425 F. Microwave the cauliflower rice for about 5 minutes until warm and kernels separated. Place the rice, cream cheese, parmesan and salt into a food processor and blend until mixture is nice and creamy.

Step 2

Place in an oven safe bowl and spread smooth.

Step 3

Top with cheese.

Step 4

Bake for ~10 minutes until cheese is melted and edges are turning brown.

Step 5

Top with cold sour cream and fresh chopped chives. Serve immediately!

  • Cauliflower Rice – 1 pound
  • Cream Cheese – 2 ounce
  • Parmesan Cheese – ¼ cup, grated
  • Coarse Kosher Salt by Morton – ¼ tsp
  • Queso Chihuahua (Chihuahua Cheese) – ½ cup, shredded
  • Sour Cream – 1 tablespoon
  • Chives – 1 tablespoon
