Cauliflower is a staple ingredient in a Low-Carb diet, but we guarantee you have never tried it this way. These cauliflower fries are the perfect side dish, appetizer, or snack. They are a hit at parties and gatherings, so make sure you double the batch.
Preheat your oven to 400F/200 C and line a baking sheet with parchment paper. Add the cauliflower rice to a bowl and sprinkle with salt. Microwave it for 5 minutes until it softens. Let it cool for another 5 minutes.
Transfer the cauliflower rice to a cheesecloth or kitchen towel. Squeeze out as much water as you can. Return the cauliflower to the bowl.
Add the mozzarella, parmesan, egg, coconut flour, xanthan gum, garlic powder, and ¼ tsp salt to the bowl. Mix until a dough forms. Cover and let it rest for 15 minutes
Place the dough between two pieces of parchment paper. Roll it out until ¼ inch thick and slice into thin “fries.” Transfer the fries to the lined baking sheet and brush generously with oil.
Bake in the oven for 15-20 minutes or until the edges become golden and crispy. Take the baking sheet out of the oven and let the fries cool for 5 minutes. Season with a generous pinch of salt and serve.
