Add the cauliflower florets to a small pan of boiling water and simmer for 4-5 minutes until fork tender. Drain completely and set aside to cool and steam dry.
Step 2
Add the cauliflower to a food processor along with the garlic, lemon juice and zest, all the cheeses, sour cream, salt and pepper. Blend to combine.
Step 3
With the food processor motor still running, slowly drizzle in the olive oil a little at a time until you have a smooth and creamy consistency.
