Add the cauliflower rice to a small pan with a tablespoon of water. Cook gently for 2 minutes until just tender. Drain away any excess liquid and set aside to cool.

Add the cauliflower to a food processor along with the ground almonds, cheddar, Parmesan, oregano, Italian seasoning, salt, pepper and half the sesame seeds. Pulse well to combine.

Add the egg and blend again to form a sticky dough.

Transfer the dough to a bowl, cover and refrigerate for 10 minutes to firm up.

Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.

Divide the dough into 9 even portions and roll into long sausage shapes.

Sprinkle the remaining sesame seeds over the breadsticks.

Arrange the breadsticks across the lined oven tray and bake for 12-15 minutes until golden brown all over. Set aside to cool and firm a little.
