Slice the celery stalks in half lengthwise then slice each half into thirds. Heat the olive oil in a skillet over a medium heat. Add the celery and cook for 2 minutes to soften and brown a little.

Thinly slice the garlic and add to the pan and sweat for a minute more. Add the balsamic and syrup and stir well to combine. Pan fry for 2-3 minutes more until the celery is well browned and caramelized.
