Place ½ cup of heavy cream and 1 T icing sugar in a stand mixer and mix until stiff peaks form adding a pinch of salt. In the meantime, blend ice, water, the rest of the cream, coffee, 3 T caramel syrup, and 6 T icing sugar in a blender. Blend until smooth and creamy.
Step 2
Pour into two tall glasses. Top with whipped cream and 1 T caramel topping sauce divided between the two glasses. Serve immediately.
