Add the coconut oil, unsalted butter, cream cheese, vanilla extract, cinnamon and erythritol to a food processor. At this point you can add any of your preferred additional flavorings. Blend together well to combine. The mixture will start to form a thick creamy paste.
Step 2
Keep the motor of the food processor running at a medium speed. Slowly drizzle in the (room temperature/cool) coffee a little at a time. Blend the mixture together until well combined. You should have a thick yet smooth and creamy consistency. Spoon this mixture into a large bowl, cover and refrigerate for 20 minutes. This will allow the mixture to firm up enough to be shaped.
Step 3
Remove the chilled mixture from the fridge. The mixture should be firm but easy to scoop up with spoon. If it is not, continue to chill further. Scoop roughly 1 tablespoon of the mix at a time and shape into a ball with your hands. Repeat this process with the remaining mixture until you have 12 coffee balls. Transfer to an airtight container and refrigerate until ready to serve.
