Step 1
Add the peanut butter, butter, and vanilla extract to a bowl. Beat using a hand mixer until creamy. Add the powdered sweetener and beat again until smooth.

Chill in the fridge for 30 minutes. Line a baking sheet or large plate with parchment paper. Portion the peanut butter mixture out with a medium cookie scoop and roll into balls. Place them on the cookie sheet and chill in the freezer for 20 to 30 minutes.

Add the chocolate and coconut oil in a bowl and microwave in 20-second intervals, stirring between each, until melted. Use a toothpick to spear the balls, dip them in the melted chocolate ¾ of the way through, and place them back on the parchment paper.
Step 4
If the weather is hot, transfer to the fridge until the chocolate hardens and the balls are firm. If the weather is cool, you can set them aside on the countertop until firm. Enjoy cold or at room temperature.
