How to Make It

Step 1

Measure out the sugar-free chocolate chips into a medium-sized bowl. We like to use stevia-sweetened chocolate chips. Feel free to use some that are already sweetened.

Step 2

Pour the cream into a heatproof measuring glass. Microwave it for one minute. Alternatively, you can heat the cream until a gentle simmer in a small saucepan, then pour it over the chocolate. Allow the heated cream to sit on the chocolate for 3-5 minutes. Do not touch the chocolate until then.

Step 3

After the time has passed, stir the chocolate. Some pieces of chocolate will be unmelted, but continue to stir, and they will melt away if your cream was hot enough at the start.

Step 4

Place the bowl in the fridge to chill for 1-2 hours. Try not to allow the chocolate to firm up for too long, or it will be too difficult to mold into a ball. Add the sprinkles to a small bowl. Then, take a teaspoon-sized cookie scoop and portion out the chocolate mixture. Roll it into a ball in your hands.

Step 5

Then, place it into the bowl with the sprinkles. Roll the ball around to coat it with the sprinkles. Repeat with the remaining chocolate.

Step 6

Keep chilled. When ready to serve, allow the brigadeiros to come to room temperature before serving. Enjoy!
