Step 1
Mince the garlic, chop the onion and dice the bell pepper. Grease a 9×13-inch oven-safe dish. Arrange the tortillas in an even layer in the bottom of the pan.
Step 2
In a large bowl, add the onion, garlic, peppers, eggs, Italian seasoning, salt, black pepper, and heavy cream. Whisk to combine then add the cheddar cheese, mozzarella cheese and feta cheese and gently whisk once more.
Step 3
Preheat the oven to 375°F (191°C). Pour the mixture over the tortillas, top with tomato slices and olives.
Step 4
Bake the casserole, uncovered, until the top is golden, edges are crisp, and a toothpick inserted in the center comes out clean, about 40–45 minutes.
Step 5
Cool for 10 minutes, then slice and serve. Leftovers keep well in the refrigerator for up to 5 days. Reheat in the microwave to your liking.
