Add the onion, garlic, ginger, and carrot to a food processor. Pulse until finely chopped and transfer to a plate. Add the tomato to the food processor and pulse into a puree. Set aside.
Add the oil to a stewing pot and place over medium heat. Add the chopped veggie mixture and sauté for 1-2 minutes until softened. Add the beef and stir for a few minutes.
Add the tomato paste, cumin, garam masala, and turmeric. Stir until combined. Add in the pulsed tomato puree and beef broth, and stir.
Roughly chop the zucchini and add it to the food processor. Pulse until finely chopped. Add to the pot with the remaining ingredients.
Stir to combine and bring to a boil. Cover and simmer for 1.5 hours until the meat is tender.
