How to Make It
Step 1
Cook your bacon slices to a crisp over the stove. Crunchy bacon is good for this recipe! Set the cooked bacon aside to cool until Step 3.
Step 2
Use a vegetable peeler to peel away approx 12 slices (equaling the ingredient weight listed) from a whole cucumber. Make sure the slices are wide with sturdy edges. Overlap the slices slightly, as pictured, creating a rectangle. Use paper towels to soak up the excess moisture from the cucumber.
Step 3
Tear and arrange the romaine lettuce on top of the cucumber. Arrange the bacon and thin slices of tomato also as pictured.
Step 4
Starting at the end with the bacon, roll the cucumber into a tight roll, tucking the other end under the roll. Slice the cucumber roll into 4 pieces. You may use toothpicks to hold your rolls in place.
