Preheat an oven to 350 F (180C) and line a baking sheet. Spread your choice of salted or unsalted hulled sunflower seeds across the tray. Roast the tray of sunflower seeds in your oven for about 10 minutes or until they start to turn golden and release some oil.

Let the sunflower seeds cool for a few minutes before moving on. While they’re still warm (not hot), blend the seeds in a food processor or blender. After blending the seeds for about 60 seconds or so, you should have a thick mixture that might collect into a ball.
Step 3
Keep blending the sunflower seeds in increments, scraping your blender down with a rubber spatula between blending. Eventually, a creamy and smooth butter will come together. Adding salt, olive oil, or a sweetener to the sunflower butter is optional but not necessary to the recipe.
