Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray.

Add the ground almonds to a mixing bowl along with the dried oregano, salt and pepper. Mix well to combine.

In a separate bowl, mix the mayonnaise, tomato puree, cumin, cayenne pepper, paprika, garlic powder and onion powder.
Step 4
Take one chicken thigh at a time and liberally coat it with the BBQ mayonnaise.
Step 5
Tip the ground almonds out onto a clean work surface and roll the coated thighs in the almonds so that they are completely covered in the crumb.
Step 6
Arrange the coated chicken pieces on the oven tray and bake for 30 – 35 minutes until crisp and golden brown all over, and the chicken is cooked through.
