Dice the halloumi into 1 inch chunks and add to a mixing bowl along with the olives, olive oil, oregano, lemon juice and zest. Mince the garlic and add to the bowl. Mix everything together well to combine.

Tip the mixture into an oven proof dish and bake for 10 minutes or until hot through and the cheese begins to brown. Scatter with chopped fresh parsley and mint to serve.
