Bahn Mi is a Vietnamese style sandwich that is typically made up of seasoned meat, pickled veggies, and a spicy element. These meal prep bowls are like a deconstructed sandwich, with ground pork, crunchy vegetables, a spicy mayo sauce, and slightly tangy fried cauliflower rice (in lieu of bread). Yum!Jessica L.

How to Make It

Step 1

Divide the spinach in the bottom of 2 meal prep containers (or more if you’ve increased the recipe yield). Set the containers aside for assembly later.

Step 2

In a bowl, mix together the mayo and sriracha. If you don’t want to use sriracha, any red/orange hot sauce can work here to make a spicy mayo. Set this bowl aside later for the assembly.

Step 3

In a pan, combine the cauliflower rice, olive oil, and vinegar. Toss and heat on medium-high heat until the rice becomes slightly toasty brown. When done, divide the cauliflower rice amongst the 2 meal prep containers over the spinach.

Step 4

Wipe the pan clean. Then, combine the ground pork, salt, pepper, red pepper, cumin, garlic, onion powder, and fish sauce in the pan. Cook on high heat while breaking up the pork with a spoon or spatula into crumbly pieces. Cook until the pork has a crisp, golden brown exterior. If you are concerned of burning, you can add additional olive oil to the pan at your discretion.

Step 5

Distribute the cooked pork across the meal prep containers. Top off each container with an even amount of cabbage mix and cilantro, and the spicy mayo.

  • Mayo – 1 tablespoon
  • Hot Chili Sauce (Sriracha) – 1 teaspoon
  • Cauliflower Rice – 1 cup, cut pieces
  • Olive Oil – 2 teaspoon
  • Rice Vinegar – ½ teaspoon
  • Ground Pork – 8 ounce
  • Salt – 0.5 teaspoon
  • Black Pepper – ¼ teaspoon
  • Crushed Red Pepper by Simply Organic – ¼ tsp
  • Cumin, Ground – ¼ teaspoon
  • Garlic Powder – 0.5 teaspoon
  • Onion Powder – ¼ teaspoon
  • Fish Sauce (nam Pla Or Nuoc Mam) – ¼ teaspoon
  • Coleslaw Mix by Whole Foods – ½ cup
  • Cilantro – 2 tablespoon, chopped
