The perfect sized pork chops are wrapped in everyone’s favorite: bacon! “Polish Gravy” is a mild cream sauce flavored with onion and dill. For this recipe, a little bit of cheese is added to the gravy to thicken it, making it perfect for swiping a bite of pork chop through. Lay 2 thin sliced center cut pork chops on a flat surface and season with the pepper, paprika, mustard powder, and garlic powder.
Wrap 2 slices of bacon around each pork chop, tucking the loose ends under the chops or under and overlapping piece of bacon.
Heat the olive oil in a wide pan over medium high heat. Lay the pork chops in the oil and cook for approx. 5 minutes on both sides. Simply cook until the outer bacon has crispy golden brown edges.
When the pork chops are done, make the Polish gravy. Melt the butter in a small pan and toast the onion powder in it over low heat for about 30 seconds.
Whisk the cream into the butter with the remaining seasonings. Bring to a simmer.
Reduce the heat of the cream so it’s just lightly bubbling, not simmering. Whisk the cheese into the cream until melted to complete the gravy.
For each serving, ladle about 2 TB of gravy on a plate and set a pork chop in the center. Drizzle a small amount of gravy over the pork chop. Garnish with additional dill or parsley.
