How to Make It

Step 1

Cover 2 wooden kebab skewers with water to soak for 20 minutes.

Step 2

Dice the halloumi into 6 even sized chunks and add to a mixing bowl. Mince the garlic and add to the bowl along with the thyme, lemon juice and black pepper. Use your hands to rub the seasonings into the cheese. Cover and refrigerate until the skewers are ready.

Step 3

Preheat the oven to 400 degrees Fahrenheit.

Step 4

Wrap each piece of halloumi tightly with a strip of bacon.

Step 5

Thread three bacon wrapped pieces onto each of the prepared skewers.

Step 6

Arrange the skewers across a shallow oven tray and bake for 15-18 minutes until the edges of the cheese are golden and the bacon is crisp and caramelized.
