Pat the artichokes dry and shake off any excess liquid or brine. Wrap one slice of bacon around the outside of each artichoke heart.
Step 3
Divide the grated mozzarella evenly between the center of the artichoke hearts. Arrange across a shallow oven tray and bake for 15 minutes until the cheese has melted and the bacon is cooked.
Step 4
Heat the olive oil in a frying pan over a medium/high heat. Add the bacon wrapped artichokes to brown and crisp the bacon on each side.
