Preheat the oven to 375 degrees Fahrenheit and line a shallow oven tray with baking paper. Dice the bacon into two-inch pieces and arrange across the lined oven tray. Brush the bacon with the lakanto syrup.

Transfer to the oven to bake for 10-12 minutes until crisp and golden, then set aside to cool and crisp further.

Whilst the bacon cools, add the mayonnaise, sour cream, lemon juice and black pepper to a mixing bowl. Crumble in the blue cheese and stir well to combine.

Serve the bacon chips with the blue cheese mayo for dipping.
