Thinly slice the shallots and add to a skillet along with the olive oil, balsamic and erythritol. Cook over a low/medium heat for 5-6 minutes or until the shallots are tender and starting to caramelize.

Add the fresh thyme and season with salt and pepper. Stir to combine and cook for a minute more.
Step 3
Set the shallot to one side, keeping warm. Add the bacon to the skillet and cook through until golden.
Step 4
Divide the brie evenly between the lettuce cups.
Step 5
Tear each strip of bacon in half and place a half over each lettuce cup then top each lettuce cup with the caramelized shallots.
