Prepare the zucchini by cutting the ends off a large squash. Cut approx. 20 pieces about 4X1 inches. You may also pat the zucchini dry with a paper towel for easier cooking later.
Step 2
Stack 5 long pieces of bacon on top of each other. Slice the bacon down lengthwise and then once across, creating 20 strips.
Step 3
Heat a pan over medium heat and drop in the bacon strips. Cook to your liking, but the crispier the bacon strips, the better for this dish. You can also have a mix of crispy and less-done pieces. You may need to cook the bacon in 2 separate rounds if you do not have a large enough pan.
Step 4
Transfer the bacon to the side, leaving all the grease in the pan. Turn your stove heat down to a medium-low heat and arrange your zucchini down in the hot grease. Again, you may need to do this part in 2 rounds. Sprinkle a pinch of pepper over the zucchini.
Step 5
Cook the zucchini in the bacon grease for 2-3 minutes, until the zucchini is golden brown without turning to mush. Flip the zucchini over and cook the other side the same way.
Step 6
Gently toss your cooked zucchini and bacon strips together before dividing in half and serving.
