Pizza for
Preheat an oven to 400 degrees. Shred a medium zucchini and use your hands to squeeze the excess liquid into a sink. Place your shredded zucchini in a small mixing bowl.
Mix the parmesan and first egg into the zucchini. Line a 9×13 sheet tray with parchment paper, and spread the zucchini mixture into a thin 8-inch circle. Press the edges of the circle towards the center slightly to create a “crust”. Keeping the crust thin is important for baking, so you can make the circle bigger if you need to. Bake the zucchini crust for 20 min.
While the crust is baking, cook 2 pieces of bacon to a crisp or just below crispy. Cut the bacon into 4 pieces.
After baking, reduce your oven heat to 350 degrees. Crack 4 eggs onto the zucchini crust and arrange the 4 pieces of bacon over the eggs. Sprinkle the sat, pepper, and cheddar cheese over the top of the pizza.
Bake in the oven for an additional 10 minutes for over easy eggs. You can go 5-7 minutes longer for harder eggs. Allow your finished pizza to cool for a few minutes, then slice into 4 pieces. Top with freshly chopped green onion.
