These juicy chicken breasts are stuffed with a zesty salsa and wrapped with bacon before baking.Perfect served alongside cauliflower rice or a green

How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Finely dice the onion, tomato and avocado and roughly chop the cilantro. Add to a mixing bowl along with the lime juice, zest, salt and pepper. Mix together well to combine.

Step 3

Slice a pocket into each chicken breast, taking care not to cut all the way through.

Step 4

Divide the salsa evenly between each chicken breast, filling the center.

Step 5

Carefully seal the filling by wrapping each chicken breast with three strips of bacon.

Step 6

Arrange the chicken breasts on a shallow oven tray and bake for 20-25 minutes or until completely cooked through and the bacon is golden and crisp.

  • Avocado – ½ each
  • Onion – ¼ medium – 2 1/2″ diameter
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
