Peel the avocado and remove the stone. Roughly chop the avocado flesh and cilantro leaves, discarding the stalks. Peel the garlic. Add the avocado, cilantro, lemon juice, garlic, salt and pepper to a food processor. Pulse to combine.
Step 2
Add the coconut milk yogurt to the food processor. Blend to combine. The mixture should be thick and creamy.
Step 3
Add the water to the food processor. Blend until you have a smooth, creamy sauce. Taste and adjust seasonings, adding more salt, lemon or herbs if desired. You may also add more water if needed for a thinner dressing.
