This tangy avo-lime mayo is simple to throw together yet brings a whole new flavour to your classic mayonnaise. Perfect as a salad dressing, for egg salads, fajita topping or simply for dipping low carb veggies in to! The recipe requires a keto friendly store bought mayo, but you can replace this with your own homemade mayo if you prefer.
How to Make It
Step 1
Peel and de-stone the avocado and add to a food processor along with the mayonnaise. Season to taste and blend until smooth.
Step 2
Pick the cilantro leaves and add them to the food processor along with 2 teaspoons of the lime juice and a teaspoon of the lime zest.
Step 3
Pulse to combine until the dressing is smooth and creamy.
Step 4
Refrigerate for 10 minutes before serving.
