Prepare a large pot of water and bring it to a boil. In the meantime, wash the artichokes very well under running water. Making sure to pull the leaves back to rinse any dirt or debris stuck in between the leaves.

Drop the artichokes into the boiling water making sure they are fully submerged. Boil for up to 30 minutes or until softened. You can test the artichokes by poking the stem with a paring knife. If it goes through easily, they are done.
Step 3
While you are waiting for the artichokes to cook, prepare the dressing. Combine the freshly squeezed lemon juice and olive oil in a bowl. Season the lemon juice mixture with the kosher salt and pepper. Serve the dressing with the hot artichokes!
