Mince the garlic, cut the cauliflower into small florets and the stems into small pieces. Place the cauliflower in a microwave-safe container and steam for about 7 minutes. The cauliflower should be very soft and almost falling apart.

Transfer the cauliflower along with shredded cheese, butter, cream, salt, black pepper, and minced garlic into a food processor or blender. Blend until the mixture is smooth, silky, and fluffy in texture for 1-2 minutes depending on the strength of your blender. Ensure to scrape down the sides of the food processor as you blend.

Immediately serve the aligot on a serving plate and garnish with chopped parsley. This dish is best enjoyed warm and fresh.
