To start, choose thin, pre-sliced salami. The salami needs to be flexible and all the pieces need to be equivalent to each other. Choose all-natural mozzarella string cheese, if possible. Cut each stick of cheese into two short halves. If you don’t have string cheese available to you, you can use brick-style mozzarella cheese. Refer to the tips in the recipe introduction if you make the substitution.

Wrap a slice of salami around each piece of string cheese. Roll the string cheese in the salami, folding the salami like you would a tortilla for a burrito. When you tuck the ends of the salami over the cheese, use a toothpick to secure the salami in place by pushing it through one end of the cheese to the other. Wrap all the pieces of cheese, and arrange them on an air fryer tray.
Step 3
Preheat your air fryer to 365 degrees. Cook the mozzarella sticks for only 6-7 minutes. Look for melted cheese and browned edges all over the salami. Keep an eye on your air fryer while it’s cooking so you don’t overcook the mozzarella sticks. Overcooked mozzarella sticks will look deflated, very dark in some areas, and the salami and cheese will both harden from losing moisture. Remove the toothpicks before serving warm.
