The dough can be prepared in advance and kept in the refrigerator for a couple of days until ready to bake, which makes this recipe a true lifesaver for when you’re in a hurry. It is a fantastic treat that will pair well with your favorite Keto coffee or tea recipe.
In a large bowl, add the almond flour, coconut flour, erythritol, and baking soda. Mix the ingredients well making sure to prevent any lumps. Optionally, add a pinch of cinnamon for a different flavor.
Now, add the butter, Greek yogurt, and vanilla extract. Using a hand mixer with dough hooks, beat well until fully incorporated. This should take about 2-3 minutes. You will get a slightly sticky dough but that’s completely fine.
Using a rubber spatula, fold in the chocolate chips. Refrigerate the dough for about 30 minutes. This will prevent the butter from spreading while baking.
Scoop out about two tablespoons of the dough and roll it into a ball. Place the ball on a large piece of parchment paper and gently press down flat to form a cookie shape. Repeat with the remaining dough.
