Preheat the oven to 180C/350F and line a baking sheet with parchment paper. Cut the cauliflower into small florets, mince the garlic, and dice the tomato. To the baking sheet, add the cauliflower florets, 1 tsp cumin, and salt and pepper to taste.

Toss to evenly coat and bake for 20 minutes until soft and slightly golden. Meanwhile, in a saucepan over medium heat, add the minced meat, salt, black pepper, 1 tsp ground cumin, and minced garlic.

Sauté the ground beef until cooked, then add in the diced tomatoes and water. Cook until the mixture reduces and thickens. Then, turn down the heat and add the spinach and stir.

Serve the ground beef in a bowl topped with roasted cauliflower. Garnish with a wedge of lemon, and enjoy.
