Peel the cucumber and slice it in half lengthwise. Use a spoon to scoop out the seeds. Set aside.
Step 2
Open and drain a can of tuna and add the meat to a bowl. Finely slice the scallion and add it to the tuna. Add the mayonnaise and lemon juice and mix until combined. Taste and adjust seasoning if needed.
Step 3
Stuff the cucumber boats with the tuna salad. Season with freshly cracked pepper and garnish with more scallions. Serve immediately.

Cucumber – 1 small – 6 3/8″ long
Tuna – 1 can – each 5 ounce net weight
Mayonnaise – 2 tbsp
Lemon juice – 3 tsp
Scallions or spring onions, tops and bulb, raw – 1 small – 3″ long
