How to Make It

Step 1

Preheat to 350°F/180°C, and line an 8-inch/20 cm baking pan with parchment paper. Place some water in a saucepan over medium heat. To a medium heatproof bowl, add the butter, sweetener, and cocoa powder. Place the bowl over the water bath and whisk constantly until the mixture is melted and completely smooth. Remove from heat and allow the mixture to cool slightly. Alternatively, melt the ingredients in the microwave in small increments.

Step 2

Add one egg at a time, whisking well after each one until fully incorporated. The texture should be completely smooth. Be sure not to over-whisk since it may result in cake-y rather than fudgy brownies.

Step 3

Add the almond flour, whisking vigorously until fully incorporated for about a minute. Transfer the pan to the oven and bake for 15-25 minutes. A toothpick inserted in the center should come out slightly moist.

Step 4

Allow the brownies to cool completely on a rack before sprinkling with some flaky salt (optional). Remove the brownies from the baking dish and cut them into 8 slices or 9 squares. To get extra clean edges, place in the freezer for 10 minutes before slicing.

Step 5

Serve right away. Store any leftover brownies in an airtight container in the refrigerator for up to a week or at room temperature for up to 3 days. Enjoy as a dessert or snack.
