Preheat the oven to 180C/ 350F and line a baking dish with parchment paper. To a large skillet over medium heat, add the crumbled sausage and fry until the sausage is slightly golden and crispy for about 3 minutes. Transfer the cooked sausage to the baking dish.

In a medium-sized bowl, crack in the eggs and add the heavy cream. Whisk until the mixture is of uniform consistency. Shred the mozzarella cheese.

Add the shredded mozzarella cheese on top of the cooked sausage layer. Then, pour the egg mixture over the cheese and sausage layer. Bake the casserole for 35 minutes until the eggs are fully set and lightly golden on the top.

Allow the casserole to slightly cool down, then cut it into 6 squares. Serve on a plate and garnish with parsley. Feel free to sprinkle fresh black pepper for an extra kick of flavor.
