Crack the eggs into a bowl and season with salt and pepper. Whisk until the yolks and whites are well incorporated. Slice the bell peppers and set aside.
Step 2
Add 1 tbsp of butter to a nonstick pan and place it over medium heat. Swirl the melted butter then pour the eggs. Mix gently and swirl using a spatula or wooden spoon until cooked.
Step 3
Transfer the eggs to a bowl. Return the pan to medium heat and add the sausage. Cook for 3-5 minutes until golden and no longer pink.
Step 4
Transfer the sausage to the bowl next to the eggs. Return the pan to a medium heat and add a tablespoon of butter. Add the pepper and spinach and cook for 2-3 minutes until tender.
Step 5
Season with salt and pepper and transfer to the bowl. Garnish with fresh herbs. Serve immediately.
