Preheat the oven to 375 degrees Fahrenheit and line a large shallow oven tray with baking paper. Add the mozzarella, parmesan, paprika and pepper to a mixing bowl. You may add salt if desired. Mix well to combine.

Take a heaped teaspoon of the mixture and create a small mound on the lined oven tray. Repeat this with the remaining mixture, creating 12 small mounds of cheese across the tray. You need to leave a gap of roughly two inches between each mound as the cheese will spread. Press each mound down a little with your hand.
Step 3
Transfer the tray to the oven. Bake for 10-15 minutes or until the chips are golden all over and browning a little at the edges. Allow the chips to cool and firm for a few minutes before serving.
