Finely chop the scallions. Slice the cherry tomatoes. Heat the oil in a large pan over medium-high heat and add the onions. Cook for 2-3 minutes, stirring constantly. Add the tomatoes and continue to cook for 5 minutes, turning occasionally. Meanwhile, crack the eggs into a bowl and beat them with a fork. Pour the eggs into the pan and add the crumbled feta cheese. Cook for another 5 minutes over medium heat.
Step 2
Shred the mozzarella cheese. Add to the pan. Cook, covered, for a couple of minutes or until the cheese melts.
Step 3
Remove from the heat and top with fresh arugula. Optionally, season with some more salt to taste. You can also add some red pepper flakes or black pepper before serving.
