This recipe combines crispy chicken skewers, tender broccoli puree, and zesty avocado salsa to create a perfect lunch or dinner option – with enough protein and healthy fat to keep you full for hours. Broccoli is an excellent source of vitamin C, vitamin K, iron, potassium, and fiber. Combined with healthy avocado, lean chicken breast, and heart-friendly olive oil, this dish makes a perfect, nutrient-dense meal for the entire family. You can also replace the chicken meat with the same amount of turkey or even salmon. Please note that the total preparation time includes the time needed to marinate the meat.

How to Make It

Step 1

Cut the meat into 1 ½ – inch cubes. Roughly chop the pepper. Finely chop the parsley. In a large bowl, combine the meat, bell pepper, one tablespoon of olive oil, chili sauce, two tablespoons of parsley, garlic powder, and salt. Mix all well and refrigerate for 30 minutes.

Step 2

Preheat the oven to 400°F (200°C). Line a baking pan with parchment paper. Thread the meat and pepper onto 4 skewers and place on the prepared baking pan. Bake for 20-25 minutes or until fully cooked through.

Step 3

Meanwhile, cut the broccoli into small florets. Set a large pot of water over high heat. When it reaches a boil, add the broccoli florets and cook for 8-10 minutes. Remove from the heat and drain.

Step 4

Add the cooked broccoli to a food processor. Add the remaining garlic powder and the remaining olive oil. Season with some salt to taste and puree until completely smooth. Optionally, add one tablespoon of heavy cream.

Step 5

Now, prepare the avocado salsa. Peel and finely chop the avocado. Finely chop the chili pepper and the remaining parsley. Add the avocado, parsley, chili pepper, and lime juice to a bowl. Season with some salt to taste and mix well to combine.

Step 6

Remove the skewers from the oven and transfer them to serving plates. Serve with broccoli puree and avocado salsa. Optionally, drizzle with some more lime juice and garnish with parsley.
