To a pot over medium heat, add 1 cup of water and bring it to a boil. Turn off the heat then add the ground flaxseeds. Stir using a spatula until the mixture thickens and starts to form a ball of dough. This process will take approximately 1 to 2 minutes.
Step 2
Transfer the dough to a cutting board and cut it into 8 equal pieces. Cut two pieces of parchment paper and place a dough of ball in between the two pieces of parchment paper. Flatten the dough with your hands and begin rolling with a rolling pin to form a round-shaped flatbread about 2mm thick. Repeat the same process for the rest of the dough balls.
Step 3
Place a non-stick pan over medium heat. Then, place the flax flatbread on the pan and cook for about 2 minutes on both sides until the wraps are dry but still malleable. If they begin to stick, lower the heat to low and use a silicon spatula to flip the flatbread gently.
Step 4
Cover the cooked flatbread in a kitchen towel to prevent them from drying and cracking. Serve them as tacos with sauces, soups, or even curries. Feel free to cut each tortilla into 8 pizza-like slices and bake for a crunchy but healthy snack.
