Roughly chop the parsley. Crack eggs into a bowl and add the parsley, cottage cheese, salt, and pepper. Whisk to combine.

Melt the butter in a large pan over medium heat. Pour in the egg mixture and cook for about 3 minutes or until almost set. Optionally, add some dried herbs of your choice.

Shred the cheddar cheese. Finely chop the turkey. Add to the pan and cook for another 2-3 minutes or until the cheese melts.

Remove from the heat once the cheese has melted and the omelet is completely set. Optionally, season with some more salt or black pepper to taste. You can also add a pinch of cayenne pepper.

Roughly chop the lettuce. Transfer the omelet to a serving plate and top with lettuce. Serve immediately.
