Turn on an oven to preheat to 350 F (180 C) and line a baking sheet with parchment paper. In a large mixing bowl, whisk together egg, almond butter, room temperature coconut oil, honey, and vanilla extract. Set this aside briefly.

Mix together almond flour, salt, cinnamon, unsweetened coconut flakes, and hemp hearts. Then, fold them into your wet ingredients in the larger bowl with a rubber spatula. Portion the cookie batter into 3-tablespoon portions on your prepared baking sheet.

Gently flatten the cookie batter into a cookie shape if it doesn’t settle naturally. Bake the cookies for 15 minutes or longer. Look for golden edges around the cookie to check for doneness. Cool before eating.
