Finely dice the onion and garlic. Grease a frying pan with olive oil and heat up over medium heat. Add the onions, garlic, and cayenne pepper. Cook for 3-4 minutes, stirring constantly. Remove from the heat.
In a large bowl, add the ground beef, shredded cheddar, almond flour, grated Parmesan, eggs, parsley, soy sauce, dried oregano, dried thyme, dried rosemary, salt, pepper, and the onion mixture. Preheat the air fryer to 350°F/175°C. Put the meatloaf in the air fryer basket and cook for 20-25 minutes. Repeat with the remaining meatloaves.
When done, remove from the air fryer and cool for 10-15 minutes before removing from the pan. Garnish with some chopped parsley and optionally serve with shredded cheddar. Slice and serve immediately.
