Peel and finely chop the garlic. Heat two tablespoons of olive oil in a large pan over medium heat. Add garlic and cook for 2 minutes.

Make sure to pat dry the prawns on paper towels very well before cooking. Season the prawns with salt to taste (pepper optional). Add the prawns to the pan and cook for 2 minutes on each side.
Step 3
Finely chop the parsley. Add to the pan and mix well. Remove from the heat. Taste and optionally add more salt or pepper.
Step 4
Arrange the greens over serving plates. Top with the prepared prawns and serve immediately. Optionally, drizzle everything with some more olive oil.
