Add the peanut butter, brown sugar replacement, egg, and baking soda to a large bowl. Mix well to combine. Optionally, add a few drops of vanilla extract.

Fold in the chocolate chips. Optionally, add more sweetener to taste. Refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F). Line a large cookie tray with parchment paper. Scoop about one tablespoon of the dough for each cookie and arrange them over the prepared baking tray. Using your fingers, gently flatten and shape each cookie.

Bake for 7 minutes. When done, remove from the oven and cool for 10 minutes. Transfer to a cooling rack and cool completely.
